Red & Green Lentils

Red Lentils: These hulled and split lentils cook quickly into a creamy, smooth texture, making them ideal for hearty soups, stews, and Indian dals (curries). They have a mild, slightly sweet flavour and are an excellent source of plant-based protein and fibre.

Green Lentils: Known for their glossy skin, green lentils hold their shape well after cooking, offering a firm, starchy texture and a peppery, nutty flavour. They are perfect for salads, side dishes, and any recipe where you want the lentils to maintain their structure.

Yellow & Green Peas

Yellow Split Peas: These husked and split dried peas have a mild, earthy flavour and a soft texture when cooked, naturally thickening soups and stews. They are a great source of protein and dietary fibre, and a staple in many traditional dishes.

Green Peas: The dried version of fresh peas, green split peas are generally sweeter than their yellow counterparts. They are packed with essential vitamins and antioxidants and can be used in a variety of soups, casseroles, and even served cold in salads.

Dry Beans (Black, Pinto, Navy)

Black Beans: Also known as black turtle beans, these are mildly sweet with a satisfying, soft texture. They absorb flavours well and are a versatile ingredient for Mexican and Caribbean cuisines, great in tacos, soups, and vegetarian burgers.

Pinto Beans: Identified by their mottled beige and brown skin (which disappears when cooked), pinto beans are one of the most popular beans. They boast a creamy texture, making them excellent for refried beans, dips, and spreads.

Navy Beans: These small, creamy white beans have a mild, delicate flavour. They are an excellent source of protein and high in fibre, commonly used in baked bean dishes, soups, and stews.

Chickpeas

Also known as garbanzo beans, chickpeas are a staple in diets worldwide, prized for their nutty, buttery flavour and firm texture. They are highly versatile, perfect for making hummus, adding to salads and curries, or roasting for a healthy snack. Canada primarily grows the large, light-seeded Kabuli type.

Green Mung

These small, olive-green dried beans, or ‘moong’ in South Asia, have a subtle sweet flavour and are a core ingredient in many Asian cuisines. They are low in calories, high in protein and fibre, and can be sprouted, used in soups (dal), stir-fries, or even desserts.

Black Matpe (Urad dal)

Known as urad dal in Indian kitchens, these beans have a distinct, earthy flavour and can be used whole or split. When cooked, they offer a deep flavour and creamy texture, making them a favourite for traditional South Asian dishes like dal makhani and idlis. They are a very high source of fibre and a good source of iron.
